Pheasant Fingers     (Kids love these) 

2-pheasant breasts de-boned /each 1/2 breast cut into 3-4 strips each =12 to 16  1"strips.
 
1 cup finely crushed rice crispy cereal.
1/2 cup flour
1 tsp dry mustard
1 tsp black pepper
1 tsp salt
1 tsp garlic salt
1/4 cup oil
6 cups cold water
 
mix dry ingredients ( any variation to taste).Play with your favorite spices. 
heat oil on med. till water drop sizzles.
cook fingers 3-5 minutes per side or until golden brown.
  
*The trick is to dip meat in water, then dry mix, and the water again before placing in oil,
this will make the pheasant seal in a crispy outer crust.(old Canadian fishing guide trick).
Works great on fish!
